Step-by-step
Whisk pear, soy, sugar, sesame oil, garlic, ginger, half the green onions, pepper.
Coat beef in marinade. Rest 30–60 minutes (or overnight).
Heat neutral oil in skillet over highest heat until smoking.
Sear beef in batches 90 seconds per side, leaving caramelized edges. Do not crowd.
Top with remaining green onions and sesame. Serve over rice.
Cook's tip
Pear is the secret tenderizer. its enzymes break down beef proteins. Skip and meat is chewy.

Frequently asked questions
Slicing the beef thin enough?
Freeze 30 minutes first. Slice against the grain at an angle. 1/8-inch is target.
No Asian pear?
Bosc pear works. Last resort: 1/4 cup kiwi juice (similar tenderizing enzymes).

First time cooking this and the timing notes saved me. Did not lift the lid once. The crust at the bottom was the best part.

Loved it but added an extra scotch bonnet — we like it spicy. Recipe scales well, made a double batch.
