Step-by-step
Whisk yogurt, lemon juice, oil, garlic, paprika, cumin, coriander, sumac, pepper flakes, and salt.
Slice chicken into strips. Coat in marinade. Refrigerate at least 30 minutes (or up to 24 hours).
Toss cabbage with vinegar and a pinch of salt. Let pickle 15 minutes.
Mix sauce yogurt with garlic and a pinch of salt.
Heat skillet to high. Sear chicken 4 minutes per side in batches until charred at edges.
Slice chicken thin. Build bowls: rice, chicken, pickled cabbage, drizzle of yogurt sauce, optional hot sauce.
Cook's tip
Yogurt marinade tenderizes without overpowering. Thighs stay juicy under high heat that would dry out breasts.
Storage
Components separately 3 days. Re-warm chicken briefly in a skillet.
Freezer: Freeze marinated raw chicken 2 months.

Frequently asked questions
Where do I find sumac?
Middle Eastern groceries, well-stocked spice aisles, or online. Adds a lemony, tart note. Skip if unavailable; the dish still works.
On a vertical spit at home?
A pile of stacked thigh slices broiled on a wire rack gets close. Or grill flat pieces and slice thin after resting.

Made this for Sunday lunch — the smoky bottom turned out perfect. Family demolished the pot in twenty minutes.

First time cooking this and the timing notes saved me. Did not lift the lid once. The crust at the bottom was the best part.

Loved it but added an extra scotch bonnet — we like it spicy. Recipe scales well, made a double batch.
