Step-by-step
Melt butter in a saucepan over medium heat. Continue cooking, swirling, until amber and nutty smelling, 5–7 minutes. Cool 15 minutes.
Whisk both sugars into cooled butter. Add eggs and vanilla. Whisk vigorously 1 minute.
Fold in flour, baking soda, and salt. Fold in chocolate.
Chill dough at least 1 hour (or overnight for deeper flavor).
Heat oven to 375°F (190°C). Line baking sheets with parchment.
Scoop 3-tbsp balls 2 inches apart. Bake 11–12 minutes until edges are set, centers look underdone.
