Chewy Brown Butter Chocolate Chip Cookies

Step-by-step

  1. Melt butter in a saucepan over medium heat. Continue cooking, swirling, until amber and nutty smelling, 5–7 minutes. Cool 15 minutes.

  2. Whisk both sugars into cooled butter. Add eggs and vanilla. Whisk vigorously 1 minute.

  3. Fold in flour, baking soda, and salt. Fold in chocolate.

  4. Chill dough at least 1 hour (or overnight for deeper flavor).

  5. Heat oven to 375°F (190°C). Line baking sheets with parchment.

  6. Scoop 3-tbsp balls 2 inches apart. Bake 11–12 minutes until edges are set, centers look underdone.

    11 min timer

  7. Tap pan on counter to flatten centers. Sprinkle with flaky salt. Cool 5 minutes on sheet before moving.

Cook's tip

The chill is non-negotiable. Skipping it = thin, greasy cookies. Overnight chill = chef-tier cookies.

Storage

Airtight at room temperature 4 days.

Freezer: Freeze raw dough balls for 3 months. Bake from frozen, add 2 minutes.

Frequently asked questions

Why brown the butter?

Browning develops nutty, caramel-like compounds. Night and day difference.

Skip the chill?

Technically yes, practically no. The dough needs to rehydrate the flour and let butter re-solidify.

Loved it but added an extra scotch bonnet — we like it spicy. Recipe scales well, made a double batch.

First time cooking this and the timing notes saved me. Did not lift the lid once. The crust at the bottom was the best part.
