Step-by-step
Soak glass noodles in hot water 5 minutes. Drain, cut to 1-inch pieces.
Heat 1 tbsp oil in a skillet. Stir-fry garlic and ginger 30 seconds.
Add cabbage, carrots, mushrooms. Stir-fry 5 minutes until just wilted.
Add noodles, soy sauce, sesame oil, white pepper, green onions. Toss 1 minute. Cool completely.
Place one wrapper diagonal. Spoon 2 tbsp filling near the bottom point.
Fold bottom over filling, fold sides in, roll up tightly. Seal with cornstarch slurry.
Heat oil to 350°F. Fry rolls in batches 3 minutes per side until deep golden.

Drain on paper towels. Serve hot with sweet chili or plum sauce.

Filling must be completely cool and well-drained. Wet filling = soggy spring rolls. Wrap tightly to avoid bursting in oil.
Storage
Best eaten fresh. Reheat in 400°F oven 8 minutes.
Freezer: Freeze unfried. Fry from frozen, add 2 minutes.
