Step-by-step

  1. Pound garlic and chili in a mortar to a rough paste.

  2. Heat 1 tbsp oil in a wok over high heat. Add paste and shallots, stir 30 seconds.

  3. Add chicken. Break apart and cook until no pink remains, 4 minutes.

  4. Add sauces and sugar. Stir-fry 1 minute to glaze.

  5. Off heat, fold in basil until just wilted.

  6. Fry eggs in remaining oil over high heat until edges are crispy.

  7. Serve over rice with the egg on top. Break the yolk and stir in.
